You start going on real dates and then say things to your friends like, “It was fine, but there wasn’t a spark.”
Then there’s the slow collection of bills and students loans and pressure. And you buy a little black book and start filling it with appointments and tasks.
And one day you wake up and pick cucumbers from your own garden and throw them in a mason jar to make pickles and that really excites you and then you realize you’re 22 going on 40.
Spicy Homemade Pickles
Yes, pickling vegetables excites me. Thanks Gina for the recipe inspiration and making me realize they only take one day to become delicious, not 3 weeks like I always thought. These are simple tangy pickles with a little kick!
3 Small (kirby) Cucumbers
2/3 cup Apple Cider Vinegar
1 Tablespoon Sea Salt
5 Garlic Cloves
4 Dried Red Chile Peppers
Whole Dill Seeds
Any Fresh Herbs you have such as dill and basil
Slice cucumbers thinly and place into a quart mason jar along with garlic, herbs, peppercorns, dill seeds, and chiles. Mix together the apple cider vinegar with the salt and dump into the jar. Fill the rest of the jar with water.
Cover tightly and refrigerate fro at least 12 hours, the longer they sit the more delicious they get!
You can keep the vinegar in the jar and keep slicing up cucumbers and allowing them to pickle.
