  • ¼Cup currants or raisins
  • 5large Pieces soft Medjool dates
  • ½tbsp Vanilla
  • ½tbsp pure coconut extract (optional)
  • 3tbsp Coconut Oil
  • ½cup coconut milk
  • 2tbsp coconut milk
  • ½tbsp Chia Seeds
  • ½cup coconut flour
  • ½cup oats
  • ½tbsp baking soda
  • ¼tbsp Sea Salt
  • ½cup coconut flakes (plus extra, for garnish)
  • ¾cup coconut sugar
  1. • Preheat the oven to 350°F.
  2. • In a food processor, process together the currants, dates, vanilla, coconut extract, and coconut oil until smooth.
  3. • Stir together the ½ cup coconut milk and chia seeds in a cup.
  4. • Meanwhile, mix together the flour, oats, baking soda, sea salt, and coconut flakes in a large bowl.
  5. • Add the coconut milk-chia seed mixture to the food processor and process again until fluffy and smooth. Add to the dry ingredients and stir to combine.
  6. • Spread the mixture into a lightly oiled pan and bake for 20 minutes.
  7. • Meanwhile make the icing by mixing together the 2 Tbsp. coconut milk and the coconut sugar until smooth.
  8. • Remove the bars from the oven and pour the icing on top. Top with coconut flakes.
