I got the milkshake idea from Ashley over at Edible Perspective who froze half and half in ice cube trays to blend together into a strawberry milkshake. I haven’t stopped thinking of milkshakes since and finally got around to buying an ice cube tray the other day to put my own spin on the recipe.
I changed up the base by using a can of coconut milk, which lent an incredibly decadent, rich texture to the drink. It was also much thicker than your average smoothie due to freezing the milk first. And the lime and mint are a perfect summer pairing that remind me of all the mojitos we sucked down this year, drowning our sorrows and celebrating occasions.
o whether it’s been a long day, a hot workout, or there’s a cause for celebration, here’s your answer.
Minty Lime Coconut Milkshake
1 and 1/4+ cups canned Coconut Milk (full fat or light)
1/2 frozen ripe banana (adds a natural sweetness but doesn’t overpower the taste)
A small handful of fresh mint leaves
Juice and zest from 1/4 lime
Stevia to taste (optional)
Pour 1 cup of coconut milk into an ice cube tray and freeze for about 3 hours. You can toss in the mint leaves after but I froze a few of them in the ice cube tray too just for the photography.
Add frozen coconut milk, banana, mint leaves, lime juice and zest, and stevia to taste (I used 3 drops of liquid stevia) into a blender. Add in 1/4 cup of liquid coconut milk and blend until everything is combined. You may find you need to add a little more liquid to loosen up the milkshake (I used a little more than a 1/4 cup).
Makes about 12oz of smoothie, serving roughly 1.
