Mayo Free paleo Chicken Salad
Although truthfully a few more steps than just globbing some mayo on pre-cooked chicken, this recipe still falls into my somewhere-between-lazy-and -simple cooking style. The homemade mayo, with didn’t really emulsify but still tasted wonderful, is well worth the extra few minutes of food processing.
So if you hate the thought of congealed store-bought mayonnaise, want a healthy light protein to have on hand, or maybe you’re just as outlandish as us “paleo” folk… this one is for you.
Mayo Free Chicken Salad
A mayo free alternative for chicken salad; lighter than average chicken salad but still a hearty meal. Paleo- friendly makes 2-5 servings.
1.25 lbs of chicken tenders (roughly)
2 apples, any variety
2 Egg Yolks
1/2 cup Olive Oil
1/2 tsp Minced Garlic
Juice from 1/4 lemon
Salt, Pepper, Cinnamon, Tarragon
Blanch the tenders by placing them in a pot, cover with water and bring to a boil. Reduce heat to medium and continue to cook for another 5 minutes or until they are white and fully cooked through. Remove from the water and allow to cool.
Meanwhile add egg yolks, garlic and lemon juice to a food processor. Begin to process and slowly drizzle in olive oil. Add salt and pepper, taste and adjust the seasonings and flavor to your liking. This is the mayo-like dressing that tastes like a cross between mayo and caesar dressing.
Cut apples into small cubes. Shred the chicken tenders into bite sized pieces. In a bowl combine the apples, chicken, and dressing. Add several dashes of cinnamon and tarragon (optional), and mix everything very well. Adding nuts for a crunch would also be a great addition.
