Roasted Sweet Potato and Apple Mash
This super simple mash is the perfect fall hybrid that is naturally sweet. Free of every typical allergen and perfect for a grain free, paleo, and vegan side dish.
3 Large Sweet Potatoes
3 medium apples (I used macintosh, any variety should do)
3-4 Tbsp Olive Oil
Salt, Pepper, Cinnamon, Ginger, Nutmeg
Preheat oven to 350 degrees.
Wash and cut sweet potatoes and apples into cubes. Place in a big bowl and toss with a generous amount of olive oil and all the spices. Spread on a baking sheet and bake for about 35 minutes.
Remove them from the oven, allow to cool slightly then place into a food processor (do this in two batches if it’s not large enough) and process until almost entirely smooth. I left mine a little textured for a good chew, but do as you prefer. It should process fine but you might need to add a tiny dash of liquid (dairy free milk or even water) to loosen it up. Taste and adjust spices as you see necessary.
