After my raw egg yolk experiment my mind immediately drifted to dippy eggs. A childhood favorite of mine and my Mom’s considering it took less than 5 minutes to get a meal on the table. Although those days it was buttered toast strips as the dunking agent, this version still brought me right back to childhood.
All the yolky goodness but a little more socially acceptable than drinking one straight up.
Dippy Eggs with Sweet Potato Fries
1 small sweet potato
Olive oil or other cooking fat
Salt, cinnamon, garlic
Preheat oven to 350 degrees. Wash sweet potato and slice into long fries. Toss with 1 tsp of olive oil and salt, cinnamon and garlic powder. (1/4 tsp or so of each or to your preference).
Bake for 35-40 mintues.
Meanwhile, cover eggs with water in a saucepan and bring to boil. Once the water in boiling immediately cut the heat and cover for 2 minutes. Drain the hot water and cover with cold water to stop the eggs from cooking. Place eggs in a a shallow ramekin or shot glass (or dippy egg station, yes they sell those!), and cut the top 1/3 of the egg shell off with a sharp knife.
Serve with sweet potato fries and scoop out the whites with a spoon.
