I’m always looking for ways to take sugar out of recipes. Dried fruits like dates and raisins are sweet whole foods that offer vitamins, minerals, and proteins – all of which are stripped from processed sugars. Coconut palm sugar is the dried nectar of the tropical coconut palm tree flower and is another good alternative to white and brown sugars.

 

Although great straight out of the oven, these bars are also good refrigerated or even just after they’ve sat out on the counter to cool, because the topping then forms a delicate crust, adding an interesting textural element. I’ve also thrown some whole raisins into the batter before baking, for those with more of a sweet tooth!

Ingredients
  • ¼ Cup currants or raisins
  • 5 large Pieces soft Medjool dates
  • ½ tbsp Vanilla
  • ½ tbsp pure coconut extract (optional)
  • 3 tbsp Coconut Oil
  • ½ cup coconut milk
  • 2 tbsp coconut milk
  • ½ tbsp Chia Seeds
  • ½ cup coconut flour
  • ½ cup oats
  • ½ tbsp baking soda
  • ¼ tbsp Sea Salt
  • ½ cup coconut flakes (plus extra, for garnish)
  • ¾ cup coconut sugar
Servings: Bars
Instructions
  1. • Preheat the oven to 350°F.
  2. • In a food processor, process together the currants, dates, vanilla, coconut extract, and coconut oil until smooth.
  3. • Stir together the ½ cup coconut milk and chia seeds in a cup.
  4. • Meanwhile, mix together the flour, oats, baking soda, sea salt, and coconut flakes in a large bowl.
  5. • Add the coconut milk-chia seed mixture to the food processor and process again until fluffy and smooth. Add to the dry ingredients and stir to combine.
  6. • Spread the mixture into a lightly oiled pan and bake for 20 minutes.
  7. • Meanwhile make the icing by mixing together the 2 Tbsp. coconut milk and the coconut sugar until smooth.
  8. • Remove the bars from the oven and pour the icing on top. Top with coconut flakes.
