Basic Grain Free Waffle
Makes 2 large Belgian waffles or 3-4 smaller waffles. Paleo friendly: grain, dairy, and sugar free.

Ingredients
2 Bananas
4 Eggs
1/4 cup Coconut Flour
1/4 cup Almond Milk (or milk of choice, or water)
1/4 tsp baking soda
Cinnamon, Nutmeg, Ginger
1/2 tsp Vanilla Extract
Coconut Oil for waffle maker and as a topping (optional)
Preheat waffle maker.
Mash bananas with a fork in a mixing bowl. Crack the eggs and whisk them together with the banana. Add in coconut flour, milk, baking soda, spices, and vanilla and mix very well until a smooth batter is formed. It should be a fairly thick batter.
Either spray waffle maker with oil or brush on coconut oil to grease it. Laddle batter onto waffle maker in 1/2- 1 cup portions depending on the size of waffles you prefer. Allow to cook based on your waffle makers instructions, mine take about 4-5 minutes to brown.
Top with melted coconut oil.

*I’ve been making larger batches of the batter and keeping it stored in the fridge so all I need to do is pour. You can also make the waffles ahead of time and store them in the freezer to toast or reheat in the morning. They hold together so well I can bring them in the car to eat (with my hands 🙂 ) while driving to work.
