These are definitely best frozen! They never freeze all the way, but take on a sort of hard ice cream texture … the perfect way to indulge after a healthy meal. And even though they’re so decadent they could be dessert, these balls are also excellent for breakfast or as a midday pick-me-up, because they’re loaded with fiber, protein, vitamins, and minerals, with nothing artificial or processed.

Ingredients
  • ½ tbsp honey
  • 10 pieces apricots
  • ½ piece small ripe mango
  • ½ tbsp Vanilla
  • 3 tbsp Coconut Oil
  • 1 cup almond meal
  • Dash or according to taste Sea Salt
Servings: Balls
Instructions
  1. • Place the honey, apricots, mango, vanilla, and coconut oil in a food processor and process until creamy (you may have to scrape down the sides a couple of times).
  2. • Remove to a bowl and stir in the almond meal. Season with a tiny amount of sea salt and stir until a consistent “dough” is formed.
  3. • Shape into balls and freeze or refrigerate to set.
