Butter is pretty hard to compete with, taste-wise, in just about every recipe, especially in baked goods and as a spread on toast. Coconut oil, however, is a worthy competitor. Spread onto the bread in this grilled cheese sandwich, coconut oil browns nicely and offers a delicate yet rich flavor, much like butter. And coconut oil has shown to offer health benefits that butter does not.
I used a vegan cheddar cheese for this recipe, but you could also use organic cheddar, a nice brie, or a Swiss cheese. Kids will enjoy picking out different types of apples and fruit preserves to use—let them have fun with their food creations! Who knows?
