3 Ingredient Coffee Pancakes
Stacks. Not only is that a great Bon Iver song, it also happens to be my latest breakfast obsession. Not complicated, 10 ingredient, can only make these on Sunday kind of stacks.
But another simple, (virtually) 3 ingredients, can make these on Wednesday kind of stacks. If you haven’t noticed yet I like to keep things as simple as possible.
I call these 3 ingredient because the spices and baking powder and technically optional and the basic recipe calls for 3 simple ingredients. Grain, gluten, dairy and sugar free, serves 1.
2 Medium Eggs
1 Medium Banana
1 Tbsp Ground Coffee
1/4 tsp baking powder
Salt, Cinnamon, Vanilla Extract
Fat for cooking
Heat your cast iron or griddle to medium heat and add your cooking fat such as butter, coconut oil, bacon fat etc.
In a bowl mash the banana. Add two eggs and whisk until thoroughly combined. Add in coffee grinds, a pinch of salt, baking powder, dash of cinnamon and dash of vanilla extract. Mix until combined. You could also use instant coffee but experiment with the amount as I’m not sure how the taste compares.
Pour batter onto hot pan into pancake size of choice. Allow to set for a few minutes until bubbles form then gently flip and cook an additional minute. Add more fat onto the pan and continue to cook pancakes.
Top with butter, syrup, almond butter or toppings of choice. Serves 1.
